Fudge Brownies + Caramel Sauce (v, gf)

I don’t know about you, but the ultimate comfort food for me as kid was a brownie sundae with vanilla ice cream. It’s funny how little cravings seem to change over the years, even though my diet and lifestyle have completely transformed. I still find myself going for the chocolate cake, brownies, ice cream, just like I did years ago.

These chocolate fudge brownies provide all the satisfaction and comfort that I crave, minus the crash and slump that usually goes along with the kinds of desserts I grew up on. These brownies are gluten free, naturally sweetened with dates, and are nut free as well! The people who have indulged in these fudgy desserts could not believe how healthy they were! I still can’t really believe it. But I’m going with it.

Hidden inside these desserts is tahini, a creamy and delicious sesame seed paste that has a similar consistency to nut butter. Tahini is a controversial ingredient – it’s kinda like cilantro, people either love it or hate it.

In this recipe, you can’t taste the tahini whatsoever, so it’s perfect if you’re not a fan but still want to reap the benefits!


Chocolate Fudge Brownies

Ingredients

  • 1 cup medjool dates pitted

  • 1/2 cup + 2 tbsp tahini

  • 1/4 cup cacao powder

  • 5 tbsp water

  • 1 tbsp ground flaxseed

  • 1 tsp apple cider vinegar

  • 1/2 tsp baking soda

  • 1/2 tsp vanilla extract

  • pinch of salt

Caramel sauce

  • 1 cup coconut sugar

  • 1 cup coconut milk full fat

  • 3 tbsp date paste or 2-3 chopped dates

  • 1 tbsp potato starch

  • generous pinch of salt

Instructions

  1. Preheat oven to 350F. 

  2. First, put dates and 5 tbsp hot water into a food processor, and blend until smooth and creamy. Add in the rest of your ingredients until the batter is smooth and creamy.

  3. Using a spoon, place about two tablespoons of dough into a nonstick muffin tin, and repeat until you run out of dough.

  4. Bake for 12-15 minutes - they will firm up once you take them out of the oven! Let sit for 30 minutes, and enjoy! 

For the caramel sauce…

  1. Combine all ingredients in a saucepan over medium heat, stir then bring to a simmer. Cook for about 2-3 minutes or until it starts to thicken. Remove from heat and enjoy!
