3-Ingredient Pancakes (v, gf)

If you could only eat one breakfast food for the rest of your life, what would it be? For me, it’s these pancakes. And that’s exactly what I’ve been doing for the past year and I don’t know if I’ll ever change. These pancakes are stupidly simple to make, plus they require just three ingredients that you probably already have in your pantry!

Once you have your basic ingredients, you can vary them any way you want, which is how I’m able to eat them so much. I’ll list some of the variations down below, but my favorite is drizzling (or drowning) them in my favorite peanut butter sauce for a hearty and indulgent, healthy breakfast. One time I was having a bad day and made these at 11pm for myself. They’re that easy.

3-Ingredient Pancakes (vegan + gluten-free)

Prep Time 10 minutes

Cook Time 10 minutes

Total Time 20 minutes


  • 1 cup rolled oats

  • 1 banana

  • ¾ cup almond milk or water

  • Optional and recommended: ½ tsp cinnamon, ½ tsp vanilla

  • Chocolate pancakes: 1 Tbsp cacao powder

  • Peanut butter pancakes: 2 Tbsp peanut butter plus more to top


  1. Using a blender or food processor, grind the rolled oats into a flour.

  2. Add banana and almond milk/water and blend until smooth, adding more water if too thick. Throw in any additional ingredients, such as cinnamon or vanilla.

  3. Heat a nonstick pan over medium heat, and add 1/3 cup batter. Flip after a minute, or once browned. Flip again.

  4. Top with your favorite garnish - almond butter, maple syrup, coconut cream, stewed blueberries.
