Let me tell you….this sauce is SOMETHIN.
I’ve been putting it on basically everything except breakfast….pizza crusts, pasta, salads, as a dipping sauce for sweet potato fries.
It’s creamy, thick, takes very minimal effort + ingredients, and is loaded with nutrients. It’s also nut-free to cut down the costs and for any of you out there with any nut allergies…I got you. I love how thick this sauce is (shout-out to the avocado) and it also has a slight cheesy flavor thanks to the nutritional yeast (packed with B vitamins!)
All you need is five minutes to whip up this recipe and you’ll be eating your pasta like a true green goddess.
Creamy Green Goddess Pesto
1 whole avocado, scooped and pit removed
1/2 cup arugula
1/2 cup basil
1/4 cup nutritional yeast
1/4 - 1/2 cup water
2 tbsp olive oil
3 garlic cloves
Juice of 1/2 lemon
Salt + pepper to taste
Combine everything in a blender, starting with 1/4 cup water and adding more if you want it to be thinner. Throw it on your favorite pasta or salad + enjoy! Store in an airtight container for up to two days, scraping off the browned part from the top as necessary.
