I’m still not over how good these cookies are and am currently salivating as I type this.
These peanut butter cookies are chewy, melty, gooey and absolutely delicious. And you’d never know that they’re naturally sweetened + made from all whole ingredients, and only five of em!
These cookies are firm enough to use them for ice cream sandwiches (my personal favorite), or maybe crumble them on top of a sundae, eat them plain, just eat the batter. Do whatever you want, you’re an adult!
Enough chit-chat, let’s get some cookies in your belly.
Peanut Butter Cookies
1 cup dates (pitted)
1 cup peanut butter (or sub other nut butter)
3 tbsp water + 1 tbsp flax
1 tsp vanilla
1/2 tsp baking soda
Preheat oven to 350F.
Blend the dates in a food processor until it forms a paste, then add the rest of the ingrdients until it becomes doughy.
Taking one tablespoon at a time, roll into a ball and press it down with a fork to flatten the cookie. Repeat until no dough remains.
Bake for 13-15 minutes. They may look a bit undercooked, but they’ll firm up as they cool. Let sit for 30 minutes (if you can wait that long) and enjoy!
